Today, I asked friends on Facebook and Twitter to tell me about where *they* would want a raw vacation. I got the following: Ireland, Scotland, England, British Columbia, San Antonio, Montana, Hawaii, Tennessee, Mexico, and… anywhere with a raw food restaurant that’s fabulous. I really enjoyed getting everyone’s input!!
In the Flavors of the World series, you can take a raw vacation of your own without leaving your kitchen. The recipes/journey take you through the flavors of 5 countries in 5-course meals that each include:

My favorite ethnic dish these days is Tiramisu. YUM! I remember enjoying that in many Italian restaurants as a kid and up to adulthood. I thought I would never have it again. I am so glad to know that it can be wonderfully made as a raw dish too. Who knew!?
I would have say it’s a toss up between Thai Green Curry and Indian Mataar Paneer (=[ impossible on a raw food diet).

My favorite ethnic dish is zuccotto. I made this before going raw and it’s very delicious. I don’t know if it can be made raw or not.

My favorite ethnic dish is chili and burritos – luckily, those are popular raw foods, and I dont feel a lack!
Lucky indeed!! Raw chili/burritos are soooo good! Have you tried the chili in Living on Live Food?! IT’S MY FAVORITE!
My favorite ethnic dish is channa masala. I’ve never had it raw, but maybe someday.
I’m also a subscriber to your newsletter if that counts. The pizza from your class looked really yummy. Have you ever had a student in one of your classes taste the food and say “yuck”?
LOL, yes and no. Never an adult. Adults love it generally. I start asking questions ef everyone is not FREAKING OUT about how perfect the food is. Then I make corrections to the recipe!
The only time was a little boy (who I happen to adore) who HATED vegetables. His pareents had a rule that if he ever didn’t like meat, he had to eat it anyways (otherwise the animal that suffered died for nothing, makes perfect sense on some level). Buuuut, he had to try veggies and could then spit them out.
So, the first day of the raw vacation, he spit out some of his food. Good thing I love people and kids and am patient! Because, wow, can you imagine if not. LOL!
But we won him over in less than a week. He’s not the #1 veggie fan, BUT he really liked eating “green slime” smoothies and kale chips and some other things by the end of the week.
P.S. I LOVE playing with Indian food! I go to an Indian grocer in town quite often and have built a relationship with them and talk to them about my raw copycats.
I love sweet, crispy, sticky banana lumpia! And tuba, which is the fermented nectar of the coconut tree, but no one knows what that is except people from Guam.
Ms. Maria! Lovely to see you! ThAt sounds really good. Can you make it raw?! Could be a great class to teach on Guam…
My favorite at the moment is palak chole Indian curry. mmmm

Well, one of my favorite dishes is Greek (of course) like a lasagna. It is called Mousaka. It is layered eggplant and zucchini with a tomato sauce that has a hint of cinnamon. Soooo good.

Living in the Washington, D.C. area, we have access to almost every ethnic cuisine you can imagine because of our diverse immigrant population.
So it’s hard to choose a favorite. I was thinking of Ethiopian, but I’ll go with Afghan. The aush soup with its complex spice mixes including mint and sides or entrees of sweetened pumpkin are fabulous.
Caryn! I almost moved to DC for that exact reason! (Not THAT food, but the diversity there and the interesting things and causes and beautiful seasons and memories from visiting, etc. etc. etc….) Lucky you to have all that around you! Thank you for sharing!!

Falafel – yes! I’d like to play with those more one day soon… love making the different ethnic foods, don’t know if you caught that.
My personal favorite ethnic food comes from El Salvador. Pupusas con salsa roja y curtido! Oh, and of course horchata to go with it all! The boy I grew up with was from El Salvadore and his mom used to make this for us all the time…spectacular!
The only thing I’ve ever missed by going raw is the soft, delicious breads.
Shannon Rose – You have me intrigued. And I’ve heard that from so many people, that they miss the bread. I’m starting to forget non-raw bread, as crazy as that is. Can’t say I mind, either, seeing as to how bad it made me feel!!

Wow, that’s a tough one because I prefer ethnic food to just plain cuisine and because the answer changes since I am constantly trying new foods. At this time my favorite would be a meditteranean meal that is actually raw: zucchini hummus, dolmas, greek country salad with a cucumber sauce, all of which I learned to prepare at Living Light, and a modified version of Alyssa’s Cohen’s falafel.

Over the summer with a bursting garden, my fav has been fresh salsa variations with raw corn chips. Otherwise, anything I can put garam masala into! Also, raw chickpea hummus is a staple in my frig…so much to enjoy, from all over the world! Who says raw must be “boring”?!
So many people do assume that, don’t they? Raw food is sooo not boring, sheesh, especially if you have the garden flowing over. Nice!
Anything with onion bread….mexican pizza, tostado’s, etc., so I guess mexican…lol!!!

I’m trulely satisfied by the flavours of my Caribbean and Indain heritage – with strong spices and foods from the ground and trees. I love plantain, yam, sweet potatoes, haldi (tumeric), jeera (cumin), all spice (pimento) and all Caribbean fruit.
Apart from Smoothies, its sometimes very challenging to try to translate these falours and textures to raw…
